Lunch with friends

We are all starting to appreciate the smaller things in life, treasuring our moments with friends and family, and making the most out of the time we have to spend together. Having your friends over for lunch is now an event, we want to get dressed up and feel our best, as let's face it we are not going out half as much as we used to. It's important to dress up now and then, make ourselves feel fabulous and enjoy a nice glass of wine with the girls whilst having a delicious lunch together. Here are some of the beautiful Primrose Park collections which you can put together to create a wonderful outfit.
A dress is the perfect solution when you don’t really have the time to think about putting a whole outfit together, you can throw this dress on and your outfit is sorted, pair it with a leather jacket (SLF Katie Leather Jacket in Rosin) and a pair of black ankle boots (A&G Jessa short boot in black)  and you are away. Perfect solution for when you are in a rush, and still want to show your friends you have made the effort to dress up. Alternatively wear it with a chunky knit, on those cooler autumnal days.

Keep it casual by wearing it with your favourite boyfriend jeans (JB Tate boy fit in perception)  and a pair of trainers, or glam it up with some smarter black trousers (BMB Florentina leather trousers in black) and some long boots. You now have your outfit sorted, but what about what you are going to cook? When it comes to lunch you want to make something simple, you don’t have as much time to prepare so the last thing you want to be doing is standing in the kitchen cooking for hours. Here is a recipe that will taste like you have spent hours in the kitchen when really it is very simple and delicious. 
 
STUFFED CURRIED AUBERGINE.
Serves 4
 
4 Small Aubergines
1 cup of Bulgar wheat
1 tin of chickpeas
1 sweet potato 
1 red onion
1 clove of garlic 
1 red pepper 
1 tsp cumin
1 tsp coriander
1 tsp paprika 
1 handful of flaked almonds
Salt 
Olive oil 
 
Preheat the oven to 180 degrees, and chop the aubergines in half lengthways. Brush the flesh with some good quality olive oil and salt and pepper. Roast in the oven for 30 minutes until the centre goes soft. 
 
Whilst the aubergines are roasting place the bulgar wheat in a bowl and cover with boiling water, enough to cover the top of the bulgar wheat by a cm or 2, and a teaspoon of stock powder and place a lid over the top and leave to sit for 20 minutes. 
 
Chop the onion garlic, sweet potato and pepper and put in a roasting tray with a good glug of olive oil with the rinsed chickpeas, add 1 teaspoon of cumin, 1 teaspoon of coriander, 1 teaspoon of paprika and some salt, mix it all together so it's coated and roast in the oven for 30-40 minutes. 
 
Once the Aubergines have cooked, take them out of the oven and scoop out the flesh, place in a bowl with the roasted veg and mix well, then stir in the bulgar wheat until it is all combined, taste for seasoning and adjust where necessary. Put the bulgar wheat mix into the skins of the aubergines and put everything back in the oven for 15 minutes, top with some flaked almonds and serve with some green leaves.
